Walter Willett is the most cited nutritional epidemiologist in history whose decades of research through the Nurses Health Study and Health Professionals Follow-up Study have defined the relationships between diet, obesity, and cancer risk that form the basis of current dietary cancer prevention guidelines. His development of the food frequency questionnaire and nutritional epidemiology methodology has enabled the entire field of dietary cancer prevention research. His evidence on red meat, processed food, and cancer risk has shaped public health policy worldwide.
