Stephen Hursting at UNC has contributed to understanding how obesity increases cancer risk and how dietary interventions modify cancer risk. His research on the mechanisms linking obesity to cancer (insulin/IGF-1 signaling, inflammation, adipokines) and on caloric restriction as a cancer prevention and treatment strategy has been important for the epidemiology and biology of obesity-associated cancers including breast, colon, and endometrial cancer.
