Luigi Fontana has conducted the longest human caloric restriction studies, demonstrating that dietary restriction slows epigenetic aging and reduces cancer-related biomarkers including IGF-1, insulin, and inflammatory cytokines. His randomized trials show that caloric restriction and time-restricted eating reverse epigenetic age acceleration measured by multiple clock systems. He provides the evidence base for dietary interventions targeting biological aging for cancer prevention.
